Our Sumatra Mandheling coffee is produced using Indonesia’s traditional semi-washed process, known as giling basah. This unique method begins with handpicked cherries that are pulped and partially sun-dried while still coated in their natural mucilage. While the beans remain soft and wet, the parchment layer is hulled — a technique found almost exclusively in Sumatra. The beans are then dried carefully to export quality.
